A few months ago at Barnes & Noble in their bargain cookbook section I came across this great little cookbook. I cannot recall the exact title and it is also at my other home so if I am remembering correctly it is called "The Dump Cookbook." It has recipes for dump soups, dump stews, dump entrees and dump desserts (most of us may be familiar with various dump cakes). Anyhow this cookbook takes one pot cooking to a whole new level. This recipe is one of the recipes in the book.
What I did different: I did not have cooked chicken so I sauteed a combination of chopped chicken breast & chicken thighs that were lightly seasoned with salt & pepper. I also added one small can of sliced mushrooms (drained). The package of frozen peas & carrots was 16-oz rather than 10-oz, and lastly I added a tablespoon of grated Parmesan cheese which adds a lot of flavor and few calories.
Consequently, my finished version was closer to a stew rather than a soup. It was delicious nonetheless.
