Pineapple Cheesecake Pie

Ingredients:

Pastry for one crust 9" pie

1/3 cup sugar
1 tablespoon cornstarch
1 8-/12 ounce can crushed pineapple, undrained

1 8-ounce package cream cheese, softened
1/2 cup sugar
1/2 teaspoon salt
2 eggs (at room temperature)
1/2 cup milk
1/2 teaspoon vanilla
1/4 cup chopped pecans

Pineapple slices and Maraschino cherries for garnish

Directions:

1.  On lightly floured surface, roll pastry to 12-inch circle.  Place in a 9-inch pie plate.  Turn under edge; flute.
2.  Combine sugar and cornstarch in saucepan; stir in pineapple.  Cook, stirring constantly until mixture is clear and thickened.  Cool; spread into bottom of pastry shell.
3.  Combine cream cheese, sugar and salt, mixing until well blended.  Add eggs one at a time, mixing well after each addition.  Blend in milk and vanilla.
4.  Pour over pineapple mixture; sprinkle with pecans.
5.  Bake at 350 degrees for 35 minutes.  Cool.
6.  Garnish with pineapple slices, cut in half, and Maraschino cherry halves.

Mom's Favorite Cookie Bar

This is a Betty Crocker recipe.  As such it is simple yet delicious.  I've tried the recipe out...and I repeat...it is delicious.  Here it is:
Ingredients:
1/2 cup butter SAVE $
1/4 cup light corn syrup
3/4 cup chunky peanut butter
1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix SAVE $
1 bag (12 oz) semisweet chocolate chips (2 cups)
1 cup butterscotch chips
1 cup dry-roasted peanuts 

Directions:

  • 1.  Heat oven to 375°F. Spray 13x9-inch pan with cooking spray.
  • 2.  In 2 quart saucepan melt butter, corn syrup and 1/4 cup of the peanut butter over medium heat stirring frequently until melted. Stir in cookie mix until soft dough forms. Press dough in bottom of prepared pan.
  • 3.  Bake 11 to 13 minutes, or until edges begin to brown. Cool completely, about 45 minutes.
  • 4. In medium microwavable bowl, mix chocolate chips, butterscotch chips and remaining 1/2 cup peanut butter. Microwave uncovered on High for 1 to 2 minutes, stirring once, until melted. Stir in peanuts. Spread evenly over cookie bars. Refrigerate about 1 hour or until chocolate is set. For bars, cut into 8 rows by 4 rows.
