"Take one fryer cut up & fry brown in olive oil salt & pepper. Take 1 cup of raw rice & sprinkle in bottom of a roaster (what size roaster I would ask?)--put chicken on top of raw rice--take one onion & 3 cloves of garlic in pan chicken was fried and fry until yellow (I would add the garlic at the last couple of minutes). Spread over chicken take 1 can Swansons chicken broth and 1 cup water bring to boil in the pan the chicken, onion, garlic was fried in. Pour over chicken & rice. Cut 1 ripe tomato and 1 green pepper into pieces and spread over chicken. Bake 1 hour at 350 degrees. (Hmmm...I am thinking I might bake at 350 for one hour covered, and then uncover and bake another 15 to 20 minutes). This recipe was given to Mom by Norma Stoeher.
Here is another recipe out of the little treasure trove of recipes from my mother written on little 3 x 4 (5?) cards. Because of cramming a lot of information into a small space, these recipes do at times need interpretation of intent. This one looks like it will be one that I will try this weekend:
